Fermentation and aging:
Spontaneous fermentation in steel with 4/5 days of contact with the skins. Manual breaking of the cap. Not filtered. No temperature control. Aging for 6 months in steel tanks.
After opening, the acidity gradually softens and transforms the wine, giving it a delicious new profile which is characterized by crunchiness, soft tannins and strong structure.
