Fermentation and aging:
Spontaneous fermentation in open steel vats with 4 days of contact with the skins. Manual breaking of the cap. Not filtered. No temperature control. Aging for 6 months in steel tanks.
Aromas of apricot, grapefruit and peach. A macerate with an aromatic and complex nose, with the typical tannic presence and a great and tasty acidity on the palate.
