Fermentation and aging:
Spontaneous co-fermentation in open steel tanks, with 4 days of contact with the skins. Manual breaking of the cap. Not filtered. No temperature control. Aging for 6 months in steel tanks.
The delicate profusion of floral and red fruit scents is intertwined with a surprising marine salinity. In the mouth are added cherry, red apple, and notes of kiwi and green apple. The final of herbs and sea is surprising.
