Fermentation and aging:
Spontaneous fermentation of Nero di Troia and Aleatico (Roz), with 4 days of contact with the skins. Manual breaking of the cap. Not filtered. No temperature control. Aging for 6 months in steel tanks.
A fresh red, with aromas of wild red fruits. On the palate it is dry and mineral, and reveals an explosion of herbs. In the finish it has notes of plum, rhubarb and cherry. Bold in profile, it is delightfully intriguing.
